Slimming World Butternut Squash Soup Recipe Ingredients:
  • 750 g butternut squash
  • 200 ml vegetable stock
  • 2 Tsp Coriander
  • ½ Tsp mixed spice
  • 2 Tsp cumin
  • 1 Tsp Tandoori Seasoning
  • salt & pepper
  • 1 Tbsp Greek yoghurt optional

Instructions

    Cup of Yum
  1. Peel and slice your butternut squash into small butternut squash cubes, making sure you get rid of all the seeds.
  2. Pour everything but the butternut squash into the soup maker and mix.
  3. Add butternut squash on top, adding as much as will fit with you still being able to close the lid.
  4. Cook on the soup maker chunky soup setting.
  5. Stir and check to make sure there is enough liquid to blend.
  6. Then blend the soup using the blend button.
  7. Pour into bowls and serve.

Notes

  • We weighed our butternut squash as we loaded it into the soup maker and found that with our Morphy Richards Soup Maker that 750g was the perfect fit.
  • You can mix and match with pumpkin or sweet potato if you prefer or follow our soup maker pumpkin soup or soup maker sweet potato soup.
