Sloppy Joe Nachos are a layer of Fritos Scoops corn chips covered in a homemade sloppy joe mixture and topped with cheddar cheese, sour cream, and fresh veggies!

Ingredients
Sloppy Joe
- 1 pound ground beef
- ¼ cup chopped onion
- ½ teaspoon garlic powder
- 1 teaspoon yellow mustard
- ¾ cup ketchup
- 1 tablespoon brown sugar
- ½ cup water
- Salt and pepper, to taste
Nachos
- 1 bag (9.25 ounces) Fritos Scoops corn chips
- 2 cups sharp cheddar cheese, shredded
- ¼ cup sour cream, optional for topping
- 2-3 green onions, diced (optional)
- 1 roma tomato, diced (optional)
- 1 medium jalapeño pepper, diced (optional)
Instructions
- Preheat oven to 400°F.
Sloppy Joes
- In a medium skillet over medium heat, cook the ground beef and onions until the beef is no longer pink. Drain.
- Stir in the garlic powder, mustard, ketchup, brown sugar, and water, mixing until combined. Add salt and pepper, to taste.
Assembly
- Place a thin layer of Fritos Scoops on a baking sheet. Top Fritos with sloppy joe mixture and cheese.
- Place baking sheet in the broiler for 2-3 minutes, or until cheese is melted and bubbly.
- Top with sour cream, onions, tomatoes, and jalapenos. Serve immediately.
