Sloppy Joe Tater Tot Casserole

Ingredients

  • 1 lb. lean ground beef
  • 1 small onion, diced
  • 1 medium sweet bell pepper, seeded and diced
  • 1 teaspoon minced garlic  (about 1 large clove)
  • 1 (24 ounce) can sloppy joe sauce* (such as Manwich brand)
  • 1 (15 ounce) can corn, drained
  • Kosher salt and ground black pepper, to taste
  • 1 cup grated sharp cheddar cheese (or sub with another type of cheese, such as Pepper Jack, Monterey Jack, Colby, or mozzarella)
  • 1 (28 ounce) package frozen tater tots

Instructions

  1. Preheat oven to 375°F. Spray a 9 x 13-inch baking dish with nonstick cooking spray and set aside. Cook beef, onion, bell pepper, and garlic in a large skillet over medium-high heat until the meat is no longer pink and the veggies are soft, about 7-9 minutes. Drain off the excess grease. Stir in the sloppy joe sauce and corn. Taste and season with salt and pepper if desired.
  2. Transfer to the prepared baking dish. Sprinkle the cheddar cheese over top. Finish with a layer of Tater Tots.
  3. Bake the casserole uncovered for 45 minutes (or until the inside is hot and bubbly and the Tater Tots are crispy and golden brown). For a crispier topping, place the dish under the broiler for a few more minutes. Just keep a close eye on it so that the tater tots don’t burn. Let the casserole rest for about 5-10 minutes before serving. Garnish with chopped fresh parsley or other herbs, if desired.

Notes

  • You'll need the larger 24-ounce can of Manwich Sloppy Joe Sauce (not the smaller 15-ounce size).
