Ingredients
- 1 pound ground beef , 85/15
- 1 yellow onion , diced
- 15 ounces tomato sauce
- 2 tablespoons brown sugar , packed
- 1 tablespoon Worcestershire sauce
- 1 tablespoon red wine vinegar
- 1/2 teaspoon kosher salt
- 16 ounces tater tots
- 2 cups cheddar cheese , shredded
Instructions
- Heat oven to 350 degrees. Spray 9x13-inch baking dish with cooking spray.
- Cook beef and onion in large skillet over medium high heat 7 to 9 minutes, stirring frequently, until brown. Drain beef mixture and return to skillet.
- Stir in tomato sauce, brown sugar, Worcestershire sauce, vinegar and salt. Cook 2 to 3 minutes, stirring frequently, until boiling.
- Pour beef mixture into casserole dish. Top with 1 cup of the Cheddar cheese, then the tater tots in a single layer.
- Bake 45 minutes, until sloppy joe mixture is bubbly and potatoes are lightly browned.
- Top with remaining cheddar cheese and cook additional 5 minutes until cheese is melted.
