Ingredients

  • 1 pound ground beef , 85/15
  • 1 yellow onion , diced
  • 15 ounces tomato sauce
  • 2 tablespoons brown sugar , packed
  • 1 tablespoon Worcestershire sauce 
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon kosher salt
  • 16 ounces tater tots
  • 2 cups cheddar cheese , shredded

Instructions

  1. Heat oven to 350 degrees. Spray 9x13-inch baking dish with cooking spray.
  2. Cook beef and onion in large skillet over medium high heat 7 to 9 minutes, stirring frequently, until brown. Drain beef mixture and return to skillet.
  3. Stir in tomato sauce, brown sugar, Worcestershire sauce, vinegar and salt. Cook 2 to 3 minutes, stirring frequently, until boiling.
  4. Pour beef mixture into casserole dish. Top with 1 cup of the Cheddar cheese, then the tater tots in a single layer.
  5. Bake 45 minutes, until sloppy joe mixture is bubbly and potatoes are lightly browned.
  6. Top with remaining cheddar cheese and cook additional 5 minutes until cheese is melted.
