Slow Cooker Adobo Chicken uses boneless, skinless chicken breasts cooked gently in a smoky, spiced sauce featuring chipotle peppers in adobo, garlic and onion powders, cumin, apple cider vinegar, tomato sauce, brown sugar, and salt. The result is tender, shreddable chicken infused with a balanced blend of smoky heat, tanginess, and subtle sweetness, ideal for serving with rice and fresh accompaniments.
Ingredients
- 3 large chicken breast boneless skinless
- 2-4 chipotle peppers in adobo sauce see note
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon cumin
- 1 tablespoon apple cider vinegar
- 1 ounce can tomato sauce
- 1 teaspoon brown sugar
- 1 teaspoon salt
Instructions
- Add all ingredients to your crockpot/slow cooker. Cover and cook on low for 8 hours or on high for 4 hours.
- Minutes before serving, use two forks to shred chicken. Stir the chicken in the sauces inside the slow cooker. Cover and cook another 30 minutes. Serve with cooked rice, veggies, fresh cilantro and diced avocados if desired.

- Adjust chipotle pepper quantity to control the spice level of the dish.
