Ingredients
- Peanut stew sauce
- 500 ml (2 cups) water
- 400 g (14oz) chopped tomatoes
- 5 tbsp smooth peanut butter
- 3 tbsp tomato puree
- 2 cm piece of peeled ginger
- 2 garlic cloves peeled
- Scotch bonnet to your taste or other chilli
- 1 tsp ground coriander
- 1/2 tsp white pepper
- 1 stock cube
- Everything else
- 2 tbsp peanut oil divided
- 450 g (1lb) beef cubed small
- 1 onion peeled and finely diced
- 2 red pepper bell, deseeded and finely diced
Instructions
- Add 1 tbsp of olive oil to a frying pan over medium heat and brown the meat on all sides in batches. Add the browned meat into the slow cooker.
- Add the remaining 1 tbsp. of oil to the frying pan and add the onion and peppers and cook for 5 mins until the onions are softened. Add the onion and pepper mix into the slow cooker.
- Stir in the peanut butter sauce, mix well and cook on high for 4 hours.
- Check after 4 hrs, and if you need a little more time then cook for a further hr.
- Adjust seasoning then serve with some rice

Notes
- This stew tastes even better the next day. So, it is worth prepping a this a few days ahead of time if possible.
