Ingredients
- 2 tablespoons olive oil
- 1 onion diced, medium
- 2 bell pepper chopped, red
- 1 carrot shredded, medium
- 4 cloves garlic minced
- 1/2 teaspoon cayenne pepper
- 1 lime zested and juiced
- kosher salt to taste
- 4 cups chicken broth
- 2 cups rotisserie chicken shredded
- 1/4 cup cilantro chopped, fresh
- 1 package rice noodles Asian
GARNISH:
- green onion diced
Instructions
- Add all the ingredients, except Asian noodles to the slow cooker.
- Cook for 3-4 hours on high or 6-8 hours on low.
- Cook the rice noodles as written on the package.
- Add rice noodles to the slow cooker and cook for an additional 30 minutes.
- Garnish with green onions and serve.
