Slow Cooker BBQ Brisket

Ingredients

  • 3 pound Beef Brisket flat
  • 3 cloves garlic pressed
  • 12 ounce beer darker the better
  • ¾ cup light brown sugar packed
  • ⅓ cup apple cider vinegar
  • ¼ cup Dijon mustard
  • ¼ cup Worcestershire sauce 
  • ¾ teaspoon paprika
  • ½ teaspoon pepper
  • ½ teaspoon kosher salt
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • 6 ounce can tomato paste
  • parsley optional garnish

Instructions

  1. In the bottom of a slow cooker, mix the garlic, beer, sugar, vinegar, mustard, worcestershire, spices, and tomato paste together. Lay brisket in slow cooker, cover and turn on low. Cook for 8 hours.
  2. Remove from slow cooker and slice beef (against the grains). Pour juices over meat and serve. Enjoy!

Notes

  • Storing: Make sure to transfer your brisket to an airtight container before putting it in the fridge. Brisket dries easily so keeping it covered is important.
  • Reheating: For best results, reheat leftover brisket with extra sauce to avoid making it dry or tough. You can wrap it in tinfoil and reheat in the oven or in the microwave, checking after every 1 minute increment to avoid accidentally overheating and making the meat tough.
  • BBQ sauce: If you like a saucier brisket, serve this alongside leftover sauce from the crockpot OR an extra bottle or jar of your favorite barbecue sauce.
