Slow Cooker BBQ Chicken
Slow Cooker BBQ Chicken uses boneless skinless chicken breasts cooked gently in water and liquid smoke before being shredded and mixed with barbecue sauce. The slow cooking tenderizes the meat, creating a shreddable texture suited for sandwiches, baked potatoes, or taquitos. The blend of liquid smoke and BBQ sauce lends a smoky-sweet flavor throughout the chicken. This hands-off approach yields moist, flavorful chicken ready to be served in various casual meals.
Ingredients
- 2 pounds chicken breast boneless skinless
- 1 cup water
- 2 Tablespoons liquid smoke
- 1 cup BBQ sauce
Instructions
- Place chicken in slow cooker. Pour water and liquid smoke over chicken. Cover and cook on low 4-6 hours.
- Remove chicken from slow cooker and shred. Drain liquid from slow cooker except for ½ c. Add ½ c. liquid from slow cooker to chicken and mix. Add BBQ sauce to chicken and place back in slow cooker. Heat on high until mixture is heated through about 30 minutes.
- Serve on buns, over baked potatoes, in taquitos or however you'd like to enjoy it!
