Slow Cooker Beef Ramen

Ingredients

  • 2 pounds stew beef
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 envelope birria seasoning packet 1 ounce
  • 4 cups water or beef stock
  • 10.75 ounces package ramen noodles 1 box or 3 smaller packets
  • Toppings such as soft-boiled egg, cilantro, onion, lime, jalapeno

Instructions

  1. Add the stew beef, onion, garlic, birria seasoning packet, and water to your slow cooker.
  2. Cover and cook on low for 4-6 hours until the stew beef is tender.
  3. 20 minutes before serving, add the ramen. Cover and cook until the ramen is tender.
  4. Serve in bowls and add your favorite toppings, such as soft-boiled eggs, cilantro, green onions, and jalapenos.

Notes

  • If you can't find the boxed ramen noodles, you can use those inexpensive packets from the grocery store—just use three packages and discard the seasoning packets.
  • A squirt of Sriracha sauce is my go-to method for adding some spice. Start with a little and add more to taste—you can always add more, but you can't take it away.
  • While stew beef is my go-to choice, you could also use chuck roast or brisket. 
  • If you can’t find birria seasoning packets you can substitute a mixture of:  ½ tablespoon chili powder, ¾ teaspoon ground cumin, ¾ teaspoon paprika, ¾ teaspoon oregano, ½ teaspoon salt, ¼ teaspoon pepper. 
  • You can also just use a packet of taco seasoning, although it won’t taste quite the same.
