Slow Cooker Beefy Nacho Soup

All of the goodness of cheesy nachos packed right into this soup! Slow cooked to perfection and topped with tortilla chips, this soup will become an instant favorite!

Ingredients

  • 1 pound lean ground beef
  • 1 chopped small onion
  • 1 clove minced garlic 
  • 1 (1-ounce) package taco seasoning
  • 1 (10-ounce) can condensed nacho cheese soup
  • 1 (10-ounce) can diced tomatoes and green chilis, undrained
  • 1 ½ cups milk
  • 1 cup sharp cheddar cheese
Optional toppings:
  • crushed tortilla chips

Instructions

  1. In a medium-sized skillet cook the 1 pound lean ground beef, 1 chopped small onion, and 1 clove minced garlic until the beef is no longer pink and the onion is clear. Drain the grease and add the meat mixture to the slow cooker.
  2. Add the 1 (1-ounce) package taco seasoning, 1 (10-ounce) can condensed nacho cheese soup, 1 (10-ounce) can diced tomatoes and green chilis, and 1 ½ cups milk. Stir to combine and put the lid on the slow cooker.
  3. Cook on LOW for 3-4 hours. Stir in 1 cup sharp cheddar cheese and continue cooking until it's melted.
  4. The soup can be kept on warm for an additional 4 hours. Top with crushed Crushed tortilla chips and additional cheese if desired.
