Slow Cooker Beer Beef Sliders

Ingredients

  • 2-3 pound chuck roast
  • 8 ounces beer
  • 1 packet brown gravy mix
  • 1 packet dry onion soup mix
  • 1 onion sliced
For assembling sliders
  • 8 Provolone cheese slices
  • Sliced pickles
  • 12 slider buns

Instructions

  1. Add the chuck roast, beer, brown gravy packet, onion soup packet, and sliced onions to the slow cooker. Stir the sides around to combine everything.
  2. Cook on low for 8 hours or high for 6 hours.
  3. Once the beef is tender, remove it, shred it, and return it to the slow cooker, stirring so it is coated in the juice.
  4. Place a sheet of parchment paper on a baking sheet and place the slider buns on it.
  5. Slice the buns open and set the top part aside.
  6. Layer the buns with cheese, followed by shredded meat. Slice pickles on top. Take more slices of cheese, cut them in half, and add them to the slider rolls. Place the top half of the buns on top of the cheese.
  7. If desired, broil the slider rolls until the cheese is slightly melted, for about 2-3 minutes.

Notes

  • Chuck roast is my go-to for this recipe because it's well-marbled and incredibly tender during slow cooking. If you can't find a chuck roast, look for other cuts like shoulder roast or bottom round.
  • Use your favorite beer.
  • It's much easier to shred the beef while it's still warm from the slow cooker. If you let it cool down too much, getting a good shred going can be tough.
  • Get creative with toppings. While I love the classic combination of provolone cheese and pickles, you can try many other delicious toppings. Caramelized onions, sautéed mushrooms, hot sauce or a spoonful of coleslaw would all be tasty additions to these sliders.
