Slow Cooker Black Bean Soup

Ingredients

  • 1 lb. dried black beans pre-soaked overnight
  • 1/2 cup chopped carrot
  • 2 jalapeños minced
  • 1 yellow onion diced
  • 3 garlic cloves minced
  • 4 oz. can of diced green chiles
  • 14.5 oz. can fire-roasted diced tomatoes undrained
  • 4 cups vegetable broth
  • 2 bay leaves
  • 2 tsp. cumin
  • 2 tsp. ground coriander
  • 2 tsp. smoked paprika
  • 1 tsp. chili powder
  • salt & pepper
  • 1/2 cup chopped cilantro leaves plus more for garnish
  • sour cream optional garnish

Instructions

  1. Add everything to a slow cooker except for the cilantro and cook on high for 4-5 hours, or low 6-8 hours. Blend soup to your desired consistency with a hand-held immersion blender. You can make it smooth, or slightly chunky, depending on how you want it.
  2. Taste for needed salt and pepper, then mix in the cilantro leaves. Serve in bowls, adding more cilantro for garnish, in addition to any other toppings you desire. Enjoy!
