Slow Cooker Cabbage Roll Soup

Slow cooker cabbage roll soup is a delicious and comforting dish that combines the flavors of classic cabbage rolls in a soup with the ease of a slow cooker. This hearty soup is perfect for those chilly days when you crave a warm and satisfying meal but are too lazy to spend time cooking in the kitchen!

Ingredients

  • 1 pound ground beef ground pork, ground turkey, ground chicken r a blend work great
  • 1 large onion chopped or 2
  • 1 tablespoon minced garlic 
  • 3 cups beef broth
  • 1 cabbage chopped into 1-inch pieces
  • 1 can (28 oz) crushed tomatoes or diced
  • 1 jar tomato sauce
  • 2 celery ribs diced
  • 2 carrots diced
  • 1 tablespoon beef bouillon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme or oregano
  • cooking spray
Options
  • ¼ teaspoon cayenne pepper add if you like heat
  • 1 pound ground beef, I usually use 2 pounds
  • 1 ½ cups sweet peppers any color, chopped
  • 1 teaspoon sugar if desired
  • 1 tablespoon garlic minced, I always add 2 tablespoons

  1. Spray your slow cooker with cooking spray. Crumble your raw ground meat and spread it out as evenly as possible across the bottom of the slow cooker. Add the celery, carrots, onions, cabbage, garlic, salt, pepper, beef bouillon and thyme. Empty the can of diced or crushed tomatoes, beef broth and tomato sauce over top. Do not stir. Cover and cook on low for about 8 hours or on high for about 4 hours.
  2. When done, remove lid and stir to mix well. Taste and add sugar if desired. If using, cook rice according to package directions and serve stew over top.

Notes

  • Take a peek at this list of side dishes to go with your stew and I think you'll be amazed at all of the options you can choose from. Once you make your choice and cook your meal, those who taste it will sing your praises all around, throughout the town!
  • My best friend insists on cooking the beef and onions before they go inside your slow cooker. I do not. I leave the decision up to you. Spray your slow cooker with cooking spray. Cook the beef, onion, and garlic over medium heat until no longer pink. Add all the ingredients to the slow cooker and cook on high for 4 hours or low for 6 to 8 hours.
  • We replaced one of the cans of diced tomatoes with beef broth because we enjoy the flavor more. If you prefer the original recipe add 2 cans of diced tomatoes and only one cup of beef broth.
  • Cabbage Roll Soup Consistency. You can easily adjust it to your preference. If it's too thin, thicken it by adding a cornstarch slurry or by letting the soup simmer uncovered until reduced to your liking.
  • Select Fresh Cabbage. You want it firm with tightly packed leaves for the best results in your crockpot cabbage rolls. You can also use pre-packaged coleslaw mix to save a bit of time.
  • Slow Cooking is Best. Slow-cooking cabbage roll soup on low for 6-8 hours yields tender cabbage and well-developed flavors. If you're short on time you can cook it on high for 3-4 hours but the result might not be as tender.
  • Adjusting the Flavors. Don't be afraid to taste the dish and adjust the salt, pepper, heat level and spices as needed. Remember, everyone's palates are different so make sure it's seasoned to your liking.
