Slow Cooker Chicken Gnocchi Soup

Ingredients

  • 1 ½ pounds boneless skinless chicken breasts cut into chunks
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup diced yellow onion
  • 4 cups chicken stock or chicken broth
  • ½ cup salted butter
  • 2 teaspoons minced garlic 
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 teaspoons dried Italian seasoning
  • ½ teaspoon basil
  • dash nutmeg
  • 17.6 ounces potato gnocchi
  • 1 can 2% evaporated milk 14 ounces
  • 2 tablespoons cornstarch
  • 2 cups spinach
  • fresh Rosemary for garnishing

  1. Add the chicken, celery, carrots, onions, chicken stock, butter, garlic, salt & pepper, Italian seasoning, basil and nutmeg to a slow cooker. 1 ½ pounds boneless skinless chicken breasts, 1 cup diced celery , 1 cup diced carrots , 1 cup diced yellow onion, 4 cups chicken stock, ½ cup salted butter, 2 teaspoons minced garlic, 1 teaspoon salt, ½ teaspoon ground black pepper, 2 teaspoons dried Italian seasoning, ½ teaspoon basil, dash nutmeg
  2. Cover and cook on high for 3-4 hours or on low for 5-6 hours.
  3. Use two forks to shred the chicken, then add the gnocchi. Cover and cook on low for 30 minutes or until the gnocchi is cooked through. 17.6 ounces potato gnocchi
  4. In a measuring cup, whisk together the evaporated milk and cornstarch. Pour this into the soup and stir. Then add the spinach and stir again. Cover and let sit for 5-8 minutes while the spinach wilts. 1 can 2% evaporated milk, 2 tablespoons cornstarch, 2 cups spinach
  5. Serve with fresh rosemary on top. fresh rosemary

  • Like spice? Add 1 teaspoon dried red pepper flakes.
  • Make this in a dutch oven on the stovetop. Simmer the ingredients for 30-35 minutes before shredding the chicken and adding the gnocchi. Then after the gnocchi cooks, add the milk and spinach and heat through.
  • Store any leftovers in an airtight container in the fridge for 3-4 days. Reheat leftovers in the microwave. Because of the milk, this soup does not freeze well.
