Ingredients
- 1 can tomato paste 15 ounce
- ½ cup light brown sugar packed
- ⅓ cup white vinegar
- ½ teaspoon black pepper
- 1 Tablespoon lemon juice
- 4 chipotle peppers in adobo sauce
- ½ teaspoon kosher salt
- 3 pound pork sirloin tip roast
- 1 can sliced peaches, drained 15 ounce
- 8 Pretzel buns
Instructions
- In a food processor or blender, pulse the tomato sauce, sugar, vinegar, pepper, lemon juice, chipotle peppers, and salt until finely blended.
- In a large crockpot, add the pork roast. Pour the blended sauce over the roast. Cover the crockpot and cook on low for 6-8 hours.
- When ready to eat, shred pork with two large forks. Pour in can of sliced peaches.
- Serve with pretzel rolls or corn muffins. ENJOY
