Ingredients

  • 1 can tomato paste 15 ounce
  • ½ cup light brown sugar packed
  • cup white vinegar
  • ½ teaspoon black pepper
  • 1 Tablespoon lemon juice
  • 4 chipotle peppers in adobo sauce
  • ½ teaspoon kosher salt
  • 3 pound pork sirloin tip roast
  • 1 can sliced peaches, drained 15 ounce
  • 8 Pretzel buns

Instructions

  1. In a food processor or blender, pulse the tomato sauce, sugar, vinegar, pepper, lemon juice, chipotle peppers, and salt until finely blended.
  2. In a large crockpot, add the pork roast. Pour the blended sauce over the roast. Cover the crockpot and cook on low for 6-8 hours.
  3. When ready to eat, shred pork with two large forks. Pour in can of sliced peaches.
  4. Serve with pretzel rolls or corn muffins. ENJOY

Notes

  • Serving ideas: Top your sandwiches with a simple coleslaw or sliced red onions if desired. This pork would also be amazing on nachos!
  • Storing: Store leftovers in an airtight container in the refrigerator. Reheat and enjoy within 3 to 4 days.
