Ingredients

Kitchen Gadgets:
  • Slow cooker
Corned Beef Stew Ingredients:
  • 800 g Leftover Corned Beef Hash
  • 250 ml beef gravy
  • 2 small potatoes
  • 1 swede/rutabaga
  • 2 medium parsnips
  • 1 medium white onion
  • 1.5 Tbsp butter
  • 1 Tbsp parsley
  • salt & pepper
  • frozen peas optional

Instructions

  1. Peel, slice and dice your potatoes and vegetables and load into the slow cooker. Season well and mix and then add chunks of butter too.
  2. Add your leftover corned beef hash, along with the gravy and mix well.
  3. Slow cook for 3.5 hours on high.
  4. Stir and then add in frozen peas and then stir a little more.
  5. Cook for a further 30 minutes on high before serving.

Notes

  • Optional. You can mix and match your vegetables. Any root vegetable will work well with this recipe.
