Slow Cooker French Onion Pot Roast

This Slow Cooker French Onion Pot Roast is a delicious twist on our Dutch Oven Pot Roast Recipe. It cooks tender for an easy roast recipe.

Ingredients

  • 3-4 pound beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 large yellow onion thinly sliced
  • 2 cans Condensed French Onion Soup 10.5 ounces each
  • 4 cloves garlic minced
  • 2 tablespoons Worcestershire sauce 
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Transfer to the slow cooker.
  3. Pour the French Onion soup and Worcestershire sauce on top of the roast.
  4. Top with the sliced onions, garlic and seasonings.
  5. Cover and cook on low for 8-10 hours, until the meat is tender and easily shreds.
  6. Shred the meat in the slow cooker and mix with the onion gravy.
  7. Serve and enjoy!

Notes

  • You can also cook on HIGH for 5-6 hours instead.
  • Refrigerate the leftovers in an airtight container for up to 5 days.
