Slow Cooker Greek Lemon Potatoes

Ingredients
- 5-6 red potatoes (approx. 1.5-2 lbs)
- 6 garlic cloves minced
- 1/4 cup olive oil
- 2 tsp. dried oregano
- 1/2 tsp. sea salt
- black pepper to taste
- 1-2 oz. lemon juice see "notes"
- chopped fresh parsley optional garnish
Instructions
- Cut each potato in half length-wise, then in half again length-wise, then cut the potatoes into largish, 1"-1.5" chunks. Add the potatoes to the slow cooker.
- To the potatoes, add the rest of the ingredients. If you love lemon like I do, feel free to use the full 2 oz. of lemon juice. Use less if desired. Toss everything together so all the potatoes are seasoned.
- Cook the potatoes on low for 4 hours. If you have the opportunity to, I like to stir them at the half-way point. If desired, garnish the finished potatoes with some fresh, chopped parsley. Enjoy!
