Ingredients

  • 1 pound great northern beans rinsed, dried
  • 1 ham bone or ham hock, large
  • 1 cup carrot diced
  • 1 cup celery diced
  • 1 onion chopped, large
  • 2 cloves garlic minced
  • 6 cups chicken broth low-sodium
  • 1 bay leaf
  • 1 teaspoon thyme dried
  • salt freshly ground, to taste
  • black pepper freshly ground, to taste

Instructions

  1. Place the rinsed beans, ham bone, carrots, celery, onion, and garlic into the slow cooker.
  2. Pour the chicken broth over the ingredients. Add the bay leaf and thyme. Season with salt and pepper.
  3. Cover and cook on low for 8 hours or until the beans are tender. Remove the ham bone, shred any remaining meat, and return the meat to the soup. Discard the bay leaf before serving.
