Ingredients
- 3 carrots (peeled and diced)
- 2 celery stalks (diced)
- 1 medium onion (diced)
- 4 cups cooked ham (diced)
- 2 cups Bob’s Red Mill 13 Bean Soup Mix (soaked overnight)
- 4 sprigs fresh thyme
- 1 bay leaf
- ½ teaspoon salt
- ¼ teaspoon pepper
- 8 cups chicken broth
- parsley (optional garnish)
Instructions
- Place all ingredients in a slow cooker and heat on low for 8 hours or high for 4 hours.
- Check for seasoning and adjust accordingly. Garnish with fresh parsley.
