Slow Cooker Ham and Potato Casserole

Toss your leftover ham in the slow cooker with potatoes, melty cheese, and buttery stuffing for my easy Slow Cooker Ham and Potato Casserole!

Ingredients

  • 1 (30-ounce) bag of frozen diced hash browns
  • 2 cups chopped ham
  • 1 (2-ounce) packet of onion soup mix, about 5 tablespoons
  • 1 cup sour cream
  • 1 (10.75-ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ cup melted unsalted butter
  • 1 (6-ounce) box herb-seasoned stuffing mix

  1. Spray the bowl of a 4-quart slow cooker with non-stick cooking spray.
  2. In a large bowl, mix 1 (30-ounce) bag of frozen diced hash browns, 2 cups chopped ham, 1 (2-ounce) packet of onion soup mix,1 cup sour cream, 1 (10.75-ounce) can condensed cream of chicken soup, 1 cup milk, 2 cups shredded cheddar cheese, and ½ teaspoon salt. Transfer the potato mixture to the slow cooker.
  3. Pour the 1 (6-ounce) box herb-seasoned stuffing mix into a medium bowl, drizzle the ¼ cup melted unsalted butter over it, and toss to coat.
  4. Sprinkle the stuffing mix over the top of the potato mixture. Cover and cook on LOW for 5-6 hours or HIGH for 2-4 hours.

Notes

  • Make In The Oven: Preheat to 350°F and grease a 9x13-inch casserole dish. Follow steps 2 and 3, then cover with foil and bake for 35-40 minutes until bubbling. Uncover and bake for 15-20 more minutes until the stuffing is golden brown.
