Ingredients
Soup:
- 8 cups chicken broth low-sodium
- 3 medium carrots peeled and chopped
- 1 onion diced
- 1 cup celery chopped
- 1 tablespoon dried parsley
- 1 teaspoon dried oregano
- 1 teaspoon dried Italian herbs
- 5 cloves garlic minced
- 1 cup acini pasta or other small pasta
- 2 cups baby spinach chopped
- salt and pepper to taste
Meatballs:
- 1 lb lean ground beef
- 1 egg
- 1 teaspoon dried onion powder
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 3 cloves garlic minced
- 2/3 cups plain bread crumbs
- 1/4 cup freshly grated Parmesan cheese
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons olive oil
Instructions
Add to the slow cooker:
- Chicken broth, carrots, onion, celery, parsley, oregano, Italian herbs, and garlic.
- Cook on low heat for 6-8 hours or high for 4 hours.

Make the meatballs:
- In a medium bowl add all the meatballs ingredients, except oil, and stir to combine. Shape into 1 inch balls.
- Place a large skillet over medium-high heat and add the oil. Once how, cook meatballs, flipping as needed until browned and cooked through. Place on paper towels to drain.
- Add the meatballs, pasta and spinach to the slow cooker and cook for 30 minutes prior to mealtime or until the pasta is done.
- Ladle into bowls and top with favorite toppings.
