Ingredients

  • 20 ounces kielbasa uncooked
  • 2 pound bag sauerkraut reserve ½ cup of the juices
  • ½ cup chicken broth
  • ⅓ yellow onion diced
  • 2 tablespoons brown monk fruit/allulose
  • 1 tablespoon country Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Heat a large skillet to medium and add in the olive oil and kielbasa. Sauté until browned on all sides, then remove.
  2. Drain the sauerkraut, reserving ½ cup of the liquid and pour it into a small mixing cup.
  3. Add the chicken broth, apple cider vinegar and mustard to the cup and whisk to combine.
  4. Add the sauerkraut to the bottom of your slow cooker insert. Add in the onions, brown sweetener, salt and pepper.
  5. Pour the chicken broth mixture in, the top with the browned kielbasa. Cover and cook on high for 2 ½ hours or low for 4-5 hours and serve.
