Ingredients

  • 2 pounds sweet potatoes peeled and cut into 2 inch pieces
  • 4 tablespoons butter
  • ⅔ cup milk (see note)
  • 1 ½ teaspoons salt
  • 1-2 teaspoons cinnamon to taste

Instructions

    Cup of Yum
  1. Add chopped sweet potatoes to your slow cooker. Cover and cook on high for 2-3 hours or on low 5-6 hours.
  2. Add the butter to the slow cooker, re-cover, and allow to cook for a few more minutes to let the butter melt. Once butter is melted, add remaining ingredients.
  3. Mix with an electric hand mixer (you can also use a masher if you prefer) until smooth.
  4. Serve warm and top with additional cinnamon, butter, and chopped pecans if desired.

Notes

  • I usually use fat free half & half in this recipe but for richer potatoes, you can use a high-fat content milk like heavy cream for ultra-rich and creamy mashed sweet potatoes! This recipe can easily be doubled, or even tripled. Cooking time may need to be increased by 1-3 hours for larger batches.
