Slow Cooker Mexican Chicken combines chicken breast, beans, tomatoes, corn, and green chile with Mexican spices right in your crockpot. An easy, delicious weeknight meal.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons taco seasoning
  • 2 cups frozen corn
  • 10.5 ounce diced tomatoes with green chiles
  • 15 ounces black beans
  • 12 ounces salsa

Instructions

    Cup of Yum
  1. Place the chicken breast into the crockpot. Cover with taco seasoning. 
  2. Add in the corn, diced tomatoes with green chiles, black beans, and salsa. 
  3. Place the lid on the crockpot and cook on LOW for 4-6 hours. 
  4. Remove the lid and serve with your favorite toppings!
