Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • ¼ cups cornstarch
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic 
  • ½ cup low-sodium soy sauce
  • ½ cup water
  • ½ cup brown sugar
  • 1 cup grated carrots
  • green onions, for garnish

  1. In a large ziplock bag add 1 pound boneless skinless chicken breasts, and ¼ cups cornstarch, and shake to coat.
  2. Whisk together the 2 tablespoons olive oil, 1 teaspoon minced garlic, ½ cup low-sodium soy sauce, ½ cup water, ½ cup brown sugar, and 1 cup grated carrots in a slow cooker.
  3. Add the chicken to the crockpot and stir to coat in the sauce evenly. Cover and cook on LOW for 4-5 hours, or HIGH for 2-3 hours, until the chicken is fully cooked.
  4. Serve over rice and garnish with green onions,
