Ingredients
- 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
- ¼ cups cornstarch
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- ½ cup low-sodium soy sauce
- ½ cup water
- ½ cup brown sugar
- 1 cup grated carrots
- green onions, for garnish
Instructions
- In a large ziplock bag add 1 pound boneless skinless chicken breasts, and ¼ cups cornstarch, and shake to coat.
- Whisk together the 2 tablespoons olive oil, 1 teaspoon minced garlic, ½ cup low-sodium soy sauce, ½ cup water, ½ cup brown sugar, and 1 cup grated carrots in a slow cooker.
- Add the chicken to the crockpot and stir to coat in the sauce evenly. Cover and cook on LOW for 4-5 hours, or HIGH for 2-3 hours, until the chicken is fully cooked.
- Serve over rice and garnish with green onions,
