Slow Cooker Pork Stew

This hearty pork stew can be made in the slow cooker for dinner.

Ingredients

  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 1/2 lb pork tenderloin cubed
  • 1/4 cup cornmeal
  • 1 teaspoon ground cumin
  • 1 Tablespoon chili powder
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1 can pinto beans or black beans drained
  • 1 cup water
  • 1 can diced tomatoes undrained
  • 2 cups frozen corn thawed

  1. Combine everything but corn in slow cooker and mix well. Cook 6-8 hours on low.
  2. Add corn and cook a few minutes more.
  3. Serve over cornbread or corn muffins.
