Ingredients

  • 5 pounds chuck roast
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 2 cloves garlic minced
  • 1 tablespoon vegetable oil

Instructions

  1. Rub the chuck roast with the salt, pepper and garlic.
  2. Heat up your slow cooker insert (if cast aluminum) or a large pot on high heat with the vegetable oil.
  3. Sear the beef on each side for 3-4 minutes.
  4. Put the beef and the drippings from the pan into your slow cooker.
  5. Cook on low for 90 minutes.
  6. Using a standard meat thermometer or a slow cooker with a thermometer probe, cook to 135 (medium rare) or 140 (medium) degrees.

Notes

  • Because slow cooker temperatures and roast sizes vary, use a meat thermometer to ensure your chuck roast reaches your desired doneness.
  • The recommended 90 minutes on low was tested for a 5-pound chuck roast and suits a weeknight meal timing.
