Slow Cooker Sausages In Onion Gravy

Ingredients

Slow Cooker Mash
  • 1 kg white potatoes
  • 2 Tbsp butter/margarine
  • 4 Tbsp skimmed milk
  • 1 Tsp mixed herbs
  • salt & pepper
Sausages With Onion Gravy
  • 12 pork sausages
  • 2 Tsp extra virgin olive oil
  • 3 large white onions
  • 300 ml Frozen Pork Stock
  • 2 Tsp tomato puree
  • 1 Tbsp thyme
  • 1 Tbsp mixed herbs
  • salt & pepper

Instructions

  1. Peel your potatoes and dice them and load the potatoes into the slow cooker with half the butter or margarine, salt, pepper, and mixed herbs. Allow to slow cook for 90 minutes to create soft mashed potatoes. After 90 minutes put the potatoes to one side in a suitable bowl and add the milk and other half of the butter.
  2. Move the slow cooker to the stovetop to sauté the sausages with a little extra virgin olive oil and sauté until you start to see colour on the sausages.
  3. Add the other slow cooker ingredients to the sausages and place on slow cook on high for 2.5 hours. After an hour though give it a stir.
  4. Whilst the slow cooker is back on, mash your potatoes and then put to one side for later.
  5. When the slow cooker is done, load the sausages onto dinner plates and then stir in a heaped tablespoon of the mash to make a thick onion gravy.
  6. Pour the onion gravy over the sausages and reheat the mashed potatoes for 2 minutes in the microwave. Then serve together your sausages, onion gravy and mashed potatoes.

Notes

  • Sauce. I always use a little mash potato as a natural thickener. It tastes so good, and you are already making mash to go with the sausages so why not?
  • Sausages. You can use any favourite sausage. We love thick pork sausages we get from the butchers, but any will do.
  • Stock. I love to use the leftovers from meals and make into frozen stock cubes. You can also make your own homemade stock like our instant pot chicken stock recipe.
