Ingredients

  • 1 pound beef short ribs
  • salt
  • black pepper
  • 3 tablespoon Worcestershire sauce
  • 2 pounds potato chopped, Yukon gold variety
  • 1 red bell pepper seeded and sliced
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • 4 egg optional

Instructions

  1. Heat a skillet over high heat. Season the 1 pound beef short ribs with salt and pepper and sear them on each side. Transfer to the bottom of a 5 to 7 quart slow cooker. Pour 3 tablespoon worcestershire sauce over short ribs.
  2. Put the chopped 2 pounds Yukon gold potatoes and diced 1 red bell pepper on top of the meat. Season with 1 teaspoon dried basil, 1 teaspoon dried oregano and more salt and pepper.
  3. Cook on low 8 to 10 hours. Serve topped with a sunny-side up egg (optional).
