Ingredients
- 1 pound beef short ribs
- salt and pepper
- 3 tablespoon Worcestershire sauce
- 2 pounds Yukon gold potatoes chopped
- 1 red bell pepper seeded and sliced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 4 eggs optional
Instructions
- Heat a skillet over high heat. Season the 1 pound beef short ribs with salt and pepper and sear them on each side. Transfer to the bottom of a 5 to 7 quart slow cooker. Pour 3 tablespoon worcestershire sauce over short ribs.
- Put the chopped 2 pounds Yukon gold potatoes and diced 1 red bell pepper on top of the meat. Season with 1 teaspoon dried basil, 1 teaspoon dried oregano and more salt and pepper.
- Cook on low 8 to 10 hours. Serve topped with a sunny-side up egg (optional).
