Ingredients

For Shredded Chicken
  • 6 chicken breasts boneless and skinless
  • 1 packet taco seasoning low sodium
  • 1 medium onion sliced
  • 4.5 oz green chilies
  • 14.5 oz Roasted Tomatoes
  • 1/2 cup cilantro roughly chopped
For Tacos and Toppings
  • 12 corn or flour tortillas
  • shredded cheese
  • tomatoes chopped
  • lettuce shredded
  • sour cream
  • guacamole
  • cilantro chopped

Instructions

For Shredded Chicken
    Cup of Yum
  1. Add chicken breasts to slow cooker and sprinkle with taco seasoning. Add diced onion, undrained green chilies, and undrained roasted to tomatoes to the slow cooker and cover.
  2. Cook on LOW for 6 to 8 hours, or until chicken is cooked all the way through
  3. Once fully cooked, shred the chicken using forks
  4. Serve with warm tortillas and preferred toppings
  5. Enjoy!
