Slow Cooker Stuffed Bell Peppers

Ingredients

  • 6 large bell peppers any color
  • 1 pound lean ground beef
  • ½ cup chopped yellow onion
  • 1 (14-ounce) can diced tomatoes
  • 1 cup cooked wild rice
  • 2 tablespoons Worcestershire sauce 
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 ½ cups shredded Colby jack cheese divided
  • ¼ cup water

  1. Cut off the tops of 6 large bell peppers and scrape out the seeds and membranes. Set aside.
  2. In a large bowl, combine 1 pound lean ground beef, ½ cup chopped yellow onion, 1 (14-ounce) can diced tomatoes, 1 cup cooked wild rice, 2 tablespoons Worcestershire sauce, 1 teaspoon salt, 1 teaspoon pepper, and 1 cup of the 1 ½ cups shredded colby jack cheese.
  3. Stuff each bell pepper with the mixture. Pour ¼ cup water into the bottom of the slow cooker. Put the stuffed peppers in the crockpot. Cook on LOW for 6 hours or on HIGH for 4 hours. The peppers should be tender, and the ground beef cooked throughout.
  4. About 15 minutes before serving, sprinkle on the remaining ½ cup of cheese. Replace the lid and allow the cheese to melt before serving.
