Slow Cooker Taco Meatloaf Recipe

This slow cooker taco meatloaf is a fun twist on classic comfort food. This easy, slow cooker recipe combines juicy taco meat with hearty meatloaf.

Ingredients

  • 2 pounds lean ground beef
  • 1/2 small onion chopped
  • 4 ounces can chopped green chiles
  • 1 ounce taco seasoning envelope
  • 1 cup crushed flavored tortilla chips like Nacho Cheese Doritos
  • 1 cup Monterey jack cheese shredded
  • 2 eggs
  • ½ cup milk
  • ½ cup taco sauce
  • 1 cup Colby jack cheese shredded
  • your favorite taco toppings

Instructions

  1. Line your slow cooker with heavy-duty aluminum foil or a slow cooker liner. Crush the chips and dice the onions.
  2. Combine the ground beef, onion, green chiles, taco seasoning, crushed chips, Monterey jack cheese, eggs, and milk in a large bowl.
  3. Once thoroughly mixed, place into your slow cooker and pat down evenly in the slow cooker.
  4. Spread your taco sauce on top and cover with the lid.
  5. Cook on high for 3 hours or low for 6 hours.
  6. Before serving, top it with the shredded Colby jack cheese, and let it melt.
  7. Lift the meatloaf out of the slow cooker using the foil. Let it rest for 5-10 minutes before slicing.
  8. Serve with all your favorite taco toppings.

Notes

  • You can use any shredded cheese you like for the meatloaf and to top it. 
  • You can use any flavor of crushed tortilla chips you like. Cool Ranch and even spicy flavors would be great in this dish.
