This slow cooker taco meatloaf is a fun twist on classic comfort food. This easy, slow cooker recipe combines juicy taco meat with hearty meatloaf.

Ingredients
- 2 pounds lean ground beef
- 1/2 small onion chopped
- 4 ounces can chopped green chiles
- 1 ounce taco seasoning envelope
- 1 cup crushed flavored tortilla chips like Nacho Cheese Doritos
- 1 cup Monterey jack cheese shredded
- 2 eggs
- ½ cup milk
- ½ cup taco sauce
- 1 cup Colby jack cheese shredded
- your favorite taco toppings

Instructions
- Line your slow cooker with heavy-duty aluminum foil or a slow cooker liner. Crush the chips and dice the onions.
- Combine the ground beef, onion, green chiles, taco seasoning, crushed chips, Monterey jack cheese, eggs, and milk in a large bowl.
- Once thoroughly mixed, place into your slow cooker and pat down evenly in the slow cooker.
- Spread your taco sauce on top and cover with the lid.
- Cook on high for 3 hours or low for 6 hours.
- Before serving, top it with the shredded Colby jack cheese, and let it melt.
- Lift the meatloaf out of the slow cooker using the foil. Let it rest for 5-10 minutes before slicing.
- Serve with all your favorite taco toppings.
Notes
- You can use any shredded cheese you like for the meatloaf and to top it.
- You can use any flavor of crushed tortilla chips you like. Cool Ranch and even spicy flavors would be great in this dish.
