Slow Cooker Teriyaki Chicken & Broccoli
Slow Cooker Teriyaki Chicken & Broccoli combines tender chicken breasts with a flavorful blend of teriyaki sauce and a hint of sriracha, gently cooked to infuse the meat. Adding broccoli towards the end ensures it stays crisp-tender, complementing the saucy shredded chicken. This method provides a hands-off cooking experience with a balanced savory-sweet flavor profile and a touch of heat, ideal for a comforting meal or serving over rice with garnishes of scallions and toasted sesame seeds.
Ingredients
- 2.5 lbs. chicken breast about 3 large chicken breasts, boneless, skinless
- 1.5 cup teriyaki sauce divided
- 1 tablespoon sriracha
- 8 ounces broccoli about 3 1/2 cups, florets
- scallions garnish, sliced
- sesame seeds garnish, toasted
Instructions
- Add the chicken breasts to a slow cooker. Pour teriyaki sauce to the one-cup mark on a liquid measuring cup. Add a tablespoon of sriracha to the teriyaki sauce and stir to combine, then pour it all over the chicken breasts.
- Cook the chicken in the teriyaki sauce on low for 3 hours, then shred the chicken into large chunks with two forks. Add the broccoli and if needed, 1/2 cup of additional teriyaki sauce. Stir to combine. Put lid back on slow cooker and continue cooking on low for another 45 minutes to an hour, or until a meat thermometer reads the internal temperature of the chicken to be 165°
- Garnish the teriyaki chicken & broccoli with sliced scallions and toasted sesame seeds and serve over your rice or your favorite side. Enjoy!
