A super easy and delicious shredded chicken dish that is made in the slow cooker.

Ingredients

  • 4 boneless skinless chicken breasts, fresh or frozen
  • 2 tablespoons taco seasoning
  • 1 chopped green bell pepper
  • 1 (14-ounce) can corn, drained
  • 1 (14-ounce) can black beans, rinsed and drained
  • 1 ½ - 2 cups salsa,
For Serving
  • cooked rice
  • chopped cilantro
  • chopped green onions
  • sour cream
  • shredded cheese
  • diced tomatoes

Instructions

  1. Place the 4 boneless skinless chicken breasts, in the bottom of the slow cooker. Sprinkle with 2 tablespoons taco seasoning.
  2. Add the 1 chopped green bell pepper, 1 (14-ounce) can corn, 1 (14-ounce) can black beans, and 1 ½ - 2 cups salsa,.
  3. Cover and cook on HIGH for 3 ½- 4 hours or until chicken is cooked through.
  4. Shred the chicken and serve over cooked rice. Top with desired toppings.
