Slow Cooker Thai Tomato Chicken and Broccoli

Easy slow cooker family meal. Full of kid-friendly flavours and it's so easy to add the ingredients and walk away.

Ingredients

  • 3 medium chicken breasts approx. 1.5 lbs
  • 1 can (330 ml) Campbell’s® Tomato Basil & Oregano Condensed Soup
  • 1 can (330 ml) coconut milk regular or light will work
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced or finely chopped
  • 1 large crown broccoli, chopped into large florets (thick bottom stem discarded)
  • 1 lime, juiced

Notes

  • * I do this directly in the slow cooker, but you can remove the chicken breasts, pull them and then return to the slow cooker to serve with all the delicious sauce and broccoli.
