Ingredients

  • 1 pound lean ground turkey
  • 1 teaspoon olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1 1.5 lb. bag Little Potato Creamer potatoes, cut into ½-inch dice
  • 2 large stalks celery thinly sliced
  • 3 carrots thinly sliced
  • 1 ½ teaspoons crushed dried rosemary
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • ¾ teaspoon salt
  • ¾ teaspoon ground pepper
  • 7 cups low sodium chicken broth
  • 1 14 ounce can petite diced tomatoes
  • ¼ cup minced flat-leaf parsley
  • salt and pepper to taste

Instructions

  1. Heat a large nonstick skillet over medium-high heat. Lightly coat with cooking spray and add the ground turkey. Cook, breaking up with a wooden spoon, until the turkey is cooked through. Transfer the cooking to a large slow cooker.
  2. Heat olive oil in a medium skillet set over medium heat. Add the onions and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook for 1 minute. Transfer the mixture to the slow cooker.
  3. To the slow cooker, add the Creamer potatoes, celery, carrots, rosemary, thyme, bay leaves, salt, pepper, chicken broth and tomatoes.
  4. Cook on LOW until the potatoes are tender, 6 to 7 hours.
  5. Stir in the parsley, remove the bay leaves, adjust the seasonings and serve.
