Ingredients

  • 2 chicken breasts
  • 2 teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 cloves garlic
  • ½ cup sun-dried tomatoes
  • 1 cup cream
  • ½ cup Parmesan Cheese
  • 1 tablespoon cornstarch
  • 2 cups spinach

Instructions

    Cup of Yum
  1. Mix the Italian seasoning, garlic powder, salt, and pepper in a small bowl.
  2. Coat the chicken breast with the seasoning mixture. Put them in the bottom of the slow cooker.
  3. Mince the garlic and dice the sun-dried tomatoes into small pieces.
  4. Mix the garlic, tomatoes, cream, parmesan, and cornstarch together. Pour the mixture over the chicken in the slow cooker.
  5. Cover and cook on low for 5 hours.
  6. Take the lid off the slow cooker and add the spinach. Let it cook for another 10-15 minutes to wilt the spinach.

Notes

  • Don't cook this recipe on high, because the cream will curdle.
  • While I usually opt for chicken breasts, boneless, skinless chicken thighs work beautifully, too.
  • For a lighter version, you can substitute half-and-half for the heavy cream.
  • If you're not a fan of spinach, you can substitute it with another leafy green or leave it out completely.
  • Mix a tablespoon of cornstarch with a little cold water to make a slurry if your sauce is too thin. Stir it into the sauce and cook for another 15-20 minutes.
