Ingredients
- 2 chicken breasts
- 2 teaspoons Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 cloves garlic
- ½ cup sun-dried tomatoes
- 1 cup cream
- ½ cup Parmesan Cheese
- 1 tablespoon cornstarch
- 2 cups spinach
Instructions
- Mix the Italian seasoning, garlic powder, salt, and pepper in a small bowl.
- Coat the chicken breast with the seasoning mixture. Put them in the bottom of the slow cooker.
- Mince the garlic and dice the sun-dried tomatoes into small pieces.
- Mix the garlic, tomatoes, cream, parmesan, and cornstarch together. Pour the mixture over the chicken in the slow cooker.
- Cover and cook on low for 5 hours.
- Take the lid off the slow cooker and add the spinach. Let it cook for another 10-15 minutes to wilt the spinach.
Notes
- Don't cook this recipe on high, because the cream will curdle.
- While I usually opt for chicken breasts, boneless, skinless chicken thighs work beautifully, too.
- For a lighter version, you can substitute half-and-half for the heavy cream.
- If you're not a fan of spinach, you can substitute it with another leafy green or leave it out completely.
- Mix a tablespoon of cornstarch with a little cold water to make a slurry if your sauce is too thin. Stir it into the sauce and cook for another 15-20 minutes.
- Don't cook this recipe on high, because the cream will curdle.
