Smoked mackerel salad with broccoli, apple and grapes

Fresh summer salad packed with fruits, vegetables and omega 3 from wild caught fish. Completely paleo proof, and just some adjustments needed to make it AIP.

Ingredients

  • 2 large smoked mackerel filets 250 - 300 grams total
  • 1 lemon NO yoghurt
  • 5 tbsp coconut yoghurt NO almond yoghurt (nuts)
  • 1 head broccoli
  • 1 lime NO olive oil
  • 1 tsp horseradish powder NO mustard (seeds)
  • 1 red onion
  • 1 apple fresh and sweet
  • 1 cup grapes
  • 4 tsp Dijon mustard (or other fine mustard)
  • or or homemade mustard without vinegar
  • 5 tbsp almond yoghurt
  • or or coconut yoghurt
  • 3 tbsp extra virgin olive oil

Instructions

  1. Steam or blanch the broccoli for 3 to 5 minutes. Rinse off with cold water.
  2. Mix the yoghurt (or citrus juice) of your choice with the mustard (or horseradish powder) and olive oil. Mix half of this dressing through the spinach. Make up the plates with the spinach.
  3. Mix the other half of the dressing through the broccoli.
  4. Pluck pieces off your mackerel filets en remove the skin (if still attached). Mix through the broccoli.
  5. Dice the onion and apple. Cut the grapes in half. Mix both through the broccoli.
  6. Add the broccoli on top of the spinach.

Notes

  • Recipe for the homemade mustard without vinegar.
