Smoked Salmon Cucumber Bites
This quick and easy Low Carb appetizer is elegant and tasty! These are perfect to serve at your next special occasion party or holiday dinner.

Ingredients
- 1 English cucumber
- 6 ounces smoked salmon thinly sliced
- ⅔ cup cream cheese room temperature
- 2 tablespoons heavy cream
- zest of ½ lemon
- 2 teaspoons fresh lemon juice
- ¼ teaspoon garlic salt
- ½ teaspoon dried dill
- Optional: 20 Capers
Instructions
- Cut the cucumber into 20 slices. Then cut the salmon into 20 strips.
- Fold each piece of salmon in thirds and place on top of each cucumber slice.
- In a mixing bowl, add the cream cheese, heavy cream, garlic salt, dill, lemon juice and zest, then whip using a Hand Mixer until well combined.
- Transfer the mixture into a piping bag fitted with the tip of your choice. Alternatively, you can use a ziplock baggie and cut off the tip. Pipe out the mixture over the top of each piece of salmon.
- Optional: Top with one caper and serve.
- Store leftovers in the fridge in an airtight container for a few days.
