Ingredients

  • 6 ounces smoked salmon thinly sliced
  • 2 large low carb tortillas
  • 6 ounces cream cheese room temperature
  • ½ cup baby spinach
  • 1 tablespoons capers roughly chopped
  • 2 teaspoons fresh dill chopped
  • 2 teaspoons fresh chives chopped
  • 2 teaspoons lemon juice
  • Zest of 1 lemon
  • ¼ teaspoon garlic salt
  • ¼ teaspoon ground black pepper

Instructions

    Cup of Yum
  1. Add the cream cheese, capers, lemon juice, lemon zest, fresh dill, fresh chives, garlic salt and ground black pepper to a small mixing bowl. Mix until well combined.
  2. Lay each tortilla out flat and smear half the cream cheese mixture over the tops, making sure it’s evenly covered.
  3. Lay half the baby spinach over the cream cheese mixture. Top with half the smoked salmon in an even flat layer.
  4. Starting from the bottom, gently roll the tortilla up, keeping it somewhat tight. Once you come to the end, slice the tortilla into pinwheels.
  5. Repeat the process with the remaining ingredients. Stack up on a serving platter when you are ready to serve.
