Ingredients

Servings
  • 4 ounces smoked salmon
  • 4 ounces cream cheese softened
  • 1 teaspoon lemon juice
  • 1 Tablespoon dill chopped, fresh
  • 1 Tablespoon capers drained
  • dill for garnish, sprigs
  • 4 lices rye bread or whole wheat

Instructions

  1. Blend softened cream cheese with chopped dill and lemon juice.
  2. Spread each slice of bread with a thin layer of butter, then a thicker layer of cream cheese.
  3. Place a layer of smoked salmon on top of the bread. Don't worry about getting to close to the edge since you'll be trimming the crusts.
  4. If not serving right away, cover with plastic wrap and a damp cloth and refrigerate until ready to serve.
  5. Slice off crusts and cut sandwiches into fingers or triangles. Garnish with a caper and a small sprig of dill.

Notes

  • For Danish open faced sandwiches:
  • For a closed smoked salmon sandwich:
  • Spread each slice of bread with a thin layer of butter, cream cheese and dill sauce.
  • Top each slice of bread with a layer of smoked salmon.
  • Garnish with additional dill sauce, caper and fresh dill sprig.
  • Assemble as you would the tea sandwiches, add micro greens and thin slices of cucumber if desired.
  • Don't trim the crusts.
