Smoked Shrimp Salad Lettuce Cups

The ultimate low carb, no-cook recipe, these smoked shrimp salad lettuce cups are perfect for a quick and easy lunch or brunch recipe. Made with smoked shrimp and old bay seasoning, these salad lettuce wraps are naturally high protein, gluten free and low carb.

Ingredients

  • 16 smoked shrimp Big O' Smokehouse - diced
  • ½ cup celery diced
  • ½ cup red onion minced
  • ¼ cup plain greek yogurt
  • ¼ cup mayo
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • salt and pepper to taste
  • bibb lettuce to serve
  • minced parsley optional garnish

Instructions

  1. In a medium bowl, add the chopped shrimp, celery and onion; set aside.
  2. In a separate small bowl, whisk together the yogurt, mayo, lemon, and old bay. Check for seasoning and add salt and pepper to taste. Pour on top of the shrimp mixture and toss well. Adjust seasoning to taste before serving in lettuce cups. Garnish with fresh parsley to serve.

Notes

  • This salad is great for prepping ahead and will stay good in the fridge for up to three days. Great as a sandwich or wrap as well!
