Ingredients
- 16 smoked shrimp Big O' Smokehouse - diced
- ½ cup celery diced
- ½ cup red onion minced
- ¼ cup plain greek yogurt
- ¼ cup mayo
- 1 tablespoon lemon juice
- 1 teaspoon Old Bay seasoning
- salt and pepper to taste
- bibb lettuce to serve
- minced parsley optional garnish
Instructions
- In a medium bowl, add the chopped shrimp, celery and onion; set aside.
- In a separate small bowl, whisk together the yogurt, mayo, lemon, and old bay. Check for seasoning and add salt and pepper to taste. Pour on top of the shrimp mixture and toss well. Adjust seasoning to taste before serving in lettuce cups. Garnish with fresh parsley to serve.
