Ingredients

  • 1 (10-12 pound) turkey
  • 1 tablespoon olive oil
  • 2 tablespoons kosher salt
  • 1 teaspoon ground black pepper optional

Instructions

  1. Thaw turkey according to the directions that accompany it. Preheat smoker to 275º F.
  2. Brush the turkey with olive oil and rub with salt and pepper.
  3. Place turkey onto smoker, breast up, and smoke until the thickest part of the breast meat reaches 165º F, around 2 1/2 - 3 hours.
  4. Remove turkey from smoker and place onto a platter, tent with foil, and allow to stand for 10-15 minutes to rest. Slice and serve.

Notes

  • Store: Place the turkey in an airtight container or wrap it in plastic and store it in the refrigerator for up to 4 days.
  • Freeze: Place the turkey or turkey slices in an airtight, freezer-safe container or wrap in airtight freezer paper and freeze for up to 3 months.
