Smokey Chipotle Lime Grilled Chicken

Ingredients

  • 1 ½ pounds of chicken breast cut into 4 pieces
  • 2 smoked chipotle peppers in the can
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon onion powder
  • 1 teaspoon tomato paste
  • 2 cloves garlic grated
  • ¼ cup olive oil
  • Zest and juice of 2 limes
  • Pinch of salt

Instructions

  1. Add all the ingredients (except the chicken) to the bowl of a mini chopper or immersion blender and blend until well combined.
  2. Add the chicken to a food storage bag and pour the mixture over the top. Massage it into the chicken, so that all pieces are well coated.
  3. Allow the chicken to marinate for at least 8 hours, but overnight is best. Then grill until the chicken reaches an internal temperature of 165F. I recommend using a meat thermometer so you can be absolutely sure it's cooked through. Serve with your favorite Keto friendly side dish.
